The tradition of the best restaurant in Mexico

In 1947, the French restaurant Au Pied de Cochon was born in Paris in the heart of the “Les Halles” market. It became famous among the workers in the area thanks to its extraordinary onion soup and varied pork dishes, as well as for being one of the few 24-hour restaurants.

In 2000, Grupo Presidente brought this innovative concept to Mexico City, which has since blossomed into one of the best restaurants in CDMX and a beacon of culinary excellence. Au Pied de Cochon Mexico has been enchanting diners with the authenticity of traditional French cuisine for over two decades.

The talent behind the exquisite taste of Au pied de Cochon Polanco

At the age of 7, Frédéric Lobjois fell in love with the gastronomic world. Growing up amidst the gastronomic splendor of his native Paris, he began his career in hotels such as the Royal Monceau and took an important step when he traveled to the French Riviera, where he worked at the Sofitel Hotel in Cannes, and later at the Majestic and Martinez, renowned for their exceptional dining experiences and delectable dishes in France. Along the way he crossed paths with Chef Guy Santoro, whose invitation led him to join the team at Au Pied de Cochon, a distinguished restaurant based in Mexico.

Once in Mexico, he worked as sous-chef at the recently inaugurated L’Alsace, thanks to the invitation of the owners of Grupo Blanc, and later became Executive Chef at La Taverne and Le Bouchon, two of the top restaurants in Mexico City. His career continued at Presidente InterContinental Los Cabos where he directed the hotel restaurant and, in 2012, he returned to the capital to one of the most important French restaurants in CDMX: Au Pied de Cochon, where he serves as Executive Chef, delighting diners with the epitome of French gastronomy.
